It’s just our soul food. If you have lived in Japan you might remember this as Coco-Ichibanya Curry. We call that coco-ichi though.haha Don’t know why it is not well-known as Indian and Thai curry in the U.S.! You can try and find your favorite spice cubes, several brands are available in the U.S. as well.
Ingredients
4~5 PERSON
- Chicken thighs
- 3 potatoes
- 1 onion
- 1 carrot
- Rice or bread or even Udon noodle
- Water
- One package of Curry spice cubes.
Directions
- Cut vegetables and chicken into bite size.
- Sauté chicken in the pot. I don’t use oil, and Sometime I add some garlic and sauté with chicken.
- Add all vegetables before the chicken is fully cooked.
- When onion turns golden, add about water until all the vegies are mostly covered and boil it.
*you can use your instant pot here if you have one, I usually do 6 min with high pressure. - When potatoes and carrots are softer and onion getting clear, stop the heat, and add a package of solid curry spice.
*A mini tip, you don’t need to break the solid spice, just put it on the top of the soup in the pot and leave it a while then it melts by itself, leave it and clean the kitchen, then come back and mix it with spoon. - Start the mild heat again and stir.
tips
You can try any kinds of proteins such as Beef stew meat, shrimp, pork, etc, only veggies is also good too.
You can get spice cubes or powders from Asian Grocery or if you prefer online, Amazon or Weee! My favorite one is Vermont Curry.
